I made a video some time ago where I made matcha bananabread granola, but that wasn't with @NEKOHAMA MATCHA ofcourse and I wanted to experiment a little before I would post this version, which is just INCREDIBLE! You have the best crunch (secret: add some puffed grains or ricecakes) and the matcha flavour makes it a little bitter. However, as we also add in bananas and maple syrup, there is also a hint of sweetness, I can just tell you, this granola is INCREDIBLE (& ADDICTIVE) so make sure to make the whole batch (or more haha)!
Ingredients:
120g rolled oats
7 rice cakes broken (or use puffed grains)
2 ripe bananas mashed
2 tbsp maple syrup
3 tbsp coconut oil
1 tsp @NEKOHAMA MATCHA
100g nuts of choice (I used almonds & pecans)
50g coconut flakes
30g sunflower seeds
30g chiaseeds
30g flaxseeds
cinnamon
1 pinch of salt
Method:
Add all the dry ingredients to a bowl and mix it together. Add the wet ingredients to another bowl and mix it together. Then add the wet to the dry and mix with your hands until everything is incorporated.
Add the granola to a lined baking sheet with parchment paper and press it down until you get a hugeeee pancake. Bake this guy in a preheated oven on 180 degrees for 15 minutes. Then flip it and break it into large chunks and let it bake for another 10-15 minutes until golden!
