I was craving tuna on this evening, but didn't want to eat a salad or something (even though I did pair it with a salad lol š, and saw that I had some amazing vegan mozzarella lying around, so I made these incredibly easy vegan cheesy tuna stuffed bell peppers! š« Absolutely a go to for a student who is busy!
Ingredients (1 portion):
ā¾ļø 1 long red bell pepper
ā¾ļø 1 can of vegan tuna
ā¾ļø 50g vegan mozzarella @nurishnl
ā¾ļø 3 tbsp tomatoe puree
ā¾ļø 1 tsp lemon juice
ā¾ļø 1 tsp mustard
ā¾ļø salad
ā¾ļø 1/2 zucchini
ā¾ļø olive oil
ā¾ļø spices of choice
ā¾ļø 1 tbsp raisins
š©š»āš³Method:
Cut the zucchini into slices and bell pepper into halves, then sprinkle salt & black pepper and olive oil and let these babies bake on 200C for 15 minutes.
To make the tuna stuffing, add the vegan tuna with 2 tbsp tomatoes puree, spices of choice, lemon juice and mustard to a bowl and stir it together.
To make the salad add salad leaves to a bowl and add olive oil, raisins and salt & black pepper to it.
Add the vegan tuna stuffing to the red bell peppers. Add the vegan mozzarella on top. Also add tomatoes puree to the zucchini and add more mozzarellaaaa. Let this bake for another 5 minutes and serve with the salad! I also had some roasted pumpkin with it!
